1 cup buttermilk
1 cup whole milk
¼ cup full fat yogurt
½ cup chopped green garlic
¼ cup parsley leaves
½ cup mixed softer leafy herb leaves like mint, tarragon, fennel fronds or dill
2 tablespoons lemon juice
2 teaspoons lemon zest
1 tablespoon champagne vinegar
3 anchovies
1 tablespoon capers
2 tablespoons olive oil
1 teaspoon salt
Champagne vinegar has a light, delicate flavor profile compared to white vinegar. It’s mild acidity and subtle fruity and floral notes, makes it the best choice for this dressing.
