Delightfully pungent with a healthy dose of green garlic and anchovies, this creamy dressing is incredibly easy to make, offering the perfect solution for utilizing an abundance of fresh spring herbs like parsley, mint, chives, tarragon and dill as well as any other herbs available. White anchovies lend to a brighter vibe, elevating the complexity of this special green goddess dressing.

Makes: 3 cups

INGREDIENTS

1 cup buttermilk
1 cup whole milk
¼ cup full fat yogurt
½ cup chopped green garlic
¼ cup parsley leaves
½ cup mixed softer leafy herb leaves like mint, tarragon, fennel fronds or dill
2 tablespoons lemon juice
2 teaspoons lemon zest
1 tablespoon champagne vinegar
3 anchovies
1 tablespoon capers
2 tablespoons olive oil
1 teaspoon salt

Blend up all the ingredients together in a blender until smooth and creamy. Serve room temperature or refrigerate to serve cold.
